I grew up with the seasons.
I was reared -in the 1950’s and ‘60’s - on a farm that ran along the shoulder of the Drum Hills in the south west corner of County Waterford.
When I think of my youth, I think of the seasons.
The changing seasons dominated all our lives; from the work we did, the games we played and the food we eat.
In ‘Food in Season’ I plan to look again at the rolling year, to look again at the food available and to think again as to how we might notice the seasons in our diet and life..
Food comes from our fields, our gardens, our farmyards, our seas, our rivers, our lakes, our wild places.
Of course, food finally becomes ‘real’ through the skill and knowledge of the cook and Food in Season would, in particular, like to help the cook.
This site will become active in the ‘back end’ of the year, when the days shorten and the wind blows and I’m inside looking out. Hopefully you will return, or write to me and I will let you know.

Terry Cunningham B.Agr.Sc., MRD took early retirement on November 30th. 2010 , having spent 33 years working in the public service; first with the Department of Agriculture and then with Teagasc-the national Agriculture and Food Development Authority . A further three years was spent working in East Africa in the 1980’s with Concern , the third world development agency.
